		<description><![CDATA[I can totally see where they&#039;re going with it, and when I first tried this recipe back in &#039;09 -having never experienced what brining and low-temperature cooking can achieve- it really was a revelation.

Plus, a lot of my dislikes (no gravy or stuffing) are pesonal perference. Which I reckon we&#039;re all allowed if you think about Heston&#039;s insistance on putting coffee beans in his &quot;perfect&quot; vanilla ice cream.

Nowadays this libertine just uses injection brining and sous-vide for convenience.]]></description>
